If you need a visual reminder of the key positioning perhaps getting an image of the Greek layout and using it as your wallpaper could work for you.
If you set the image up as a background on Workspace 2, you could just switch to that to view it and switch back to work.

If your on screen keyboard just disappears when you move the cursor over it then you may have this bug which has been reported to onboard developers, but they do not seem to have been providing updates for quite a while.
